Foster's Chai
A healthy ginger bomb to kick-start your morning.

5 grams (g) of whole black peppercorn

8 1/2 grams (g) of whole green cardamom

200 grams (g) of diced ginger root

2 grams (g) of whole clove

1 1/2 grams (g) of dried stevia leaf

1/2 gram (g) of dried saffron

22 1/2 grams (g) of loose organic assam tea

2 grams (g) of whole sichuan pepper

6 sticks (st) of Ceylon cinnamon stick
Add assam to 42oz of boiling water.
Remove from heat & steep for 4 minutes.
Strain out tea & place back on burner.
Dice ginger root using a food processor
Using a mortar and pestle, crush all other ingredients
Bring tea in pot to a boil.
Add diced ginger and crushed dry ingredients to pot of boiling tea.
Reduce heat and let simmer for 10 minutes
Strain all ingredients out using a sieve
Pour 4oz of chai into a glass (of cold) or mug (if hot)
Add 4oz of oat milk, almond milk, cream, or soy milk (heated if drinking hot)
Add ice (if serving cold)
Pour remaining concentrate into a mason jar and put in fridge for later consumption. You should still have 7 servings left!
