Strawberry, Feta, and Snap Pea Salad
This salad represents the end of Winter as the first plants of Spring are ready to harvest. April coincides with this short period of perfect weather in Texas before temps regularly exceed 80 degrees. To take advantage of this short window, Peas must be planted in late January to get any harvests in time. This salad combines juicy strawberries, salty feta, sweet balsamic reduction with crunchy snap peas to make a special Spring treat.

1 teaspoon (tsp) of balsamic reduction

1 tablespoon (tbsp) of extra-virgin olive oil

1 pint (pt) of sliced strawberry

1 head of butterhead lettuce
Assemble:
Add lettuce to a serving bowl. Drizzle olive oil and add S&P on top before lightly tossing.
Combine strawberries, snap peas, and feta into a mixing bowl and gently stir.
Pour the bowl of toppings over the lettuce and lightly drizzle balsamic on top to serve.
